Whip up a quick and mess-free dinner—meatballs in the microwave! It’s lightning quick and saves you having to preheat your oven. This is a family-friendly meal that’s packed with peppers and pineapple for that perfect balance of sweetness. Best served over a bed of rice to soak up the sauce.
- In a large bowl, combine beef and 2 tbsp seasoning. Mix well. Form into 16 meatballs (about a scant 2 tbsp each).
- Arrange in a single layer in Round Steamer or Multipurpose Steamer (it’s OK if they touch).
- Chop peppers; add to steamer. Cover; microwave on high 6–8 min, or until cooked.
- Meanwhile, prepare sauce: drain pineapple chunks but reserve the juice.
- In Sauté Pan, combine remaining seasoning, reserved pineapple juice, soy sauce, and oil. Bring to a boil over medium-high heat, stirring constantly. Reduce heat; simmer until sauce has thickened to your liking.
- When meatballs and peppers are cooked, carefully drain and discard liquid from bottom of Steamer. Add meatballs, peppers, and reserved pineapple chunks to pan; stir until meatballs are coated with sauce and pineapple is heated through, about 1–2 min.
Serve with 1⁄2 cup cooked white rice and 1⁄2 cup steamed veggies.
